Baked Pork Chops with a Piquant Sauce

I wanted a pork chop recipe that's totally new, different, yet very flavorful. I searched through Gordon Ramsay's endless list of recipes and found this. When I saw the can of tomatoes as one of the ingredients, I was a bit skeptical about how it will turn out. Although I assumed it tasted like tomato sauce, I was anticipating a taste particularly different from a spaghetti sauce.

The taste was certainly distinctive. The thyme, rosemary, garlic
and tomatoes gave a delicate and rich punch to the dish. The sugar gave a smooth sweetness to the sauce. It's very easy and fast to cook so it is perfect for busy moms (and dads).

Here are the ingredients you will need:

4 pork chops, about 250g each
a little olive oil plus extra to drizzle
few thyme sprigs
few rosemary sprigs (leaves only)
1/2 head of garlic, separated into cloves (unpeeled)
sea salt and black pepper 
 
Sauce:
3 tsp olive oil
1 large onion, peeled and finely chopped
1 red pepper, deseeded and finely chopped
1 red chili, deseeded and finely chopped
200g chestnut mushrooms, trimmed and finely sliced
400g can chopped tomatoes
sea salt and black pepper
1tsp caster sugar

Note: You can be flexible with the ingredients and the procedure. I omitted the red chili and I sometimes just fry the pork chops. It is easier to clean the stove top than the oven :D
