Egg Pie (blogging as it bakes)

It's Pi Day. Naturally, Yna would badger me to make a pie today. And so I did. I'm a little anxious of the outcome because the crust is a bit thick. I used a silicon mat so I don't have much space to work on. I don't know if the thickness of the crust will affect the cooking time.

I checked 10 minutes before it's done. I turned the pie around to even out the browning of the top and the filling started to move in a wavy motion ... lol. Please don't tell me I messed up!

After the desired 40 minutes of baking, I took it out and it is still wavy. I decided to take a picture (lol) first before I destroy it -- I will take a peek under the browned top after giving it another 5 minutes. I peeked near the crust's edge and it looked cooked already. The wavy part is mostly in the middle now, so I guess I will have to cook it 10 minutes longer.

After 10 minutes, it is still wavy in the middle but very minimal now. The crust does not look burnt yet (lol) so I'll let it cook for another 10 minutes and I'm done.

Probably next time, I'll make the crust thinner and I will use a foil baking pan instead of a glass pyrex. What a predicament!

Ten mintes after, lo and behold, the waving motion is totally gone. It looked perfect!
